Apple & Cinnamon Ice Cream
2 cups heavy cream
1 cup whole milk
.25 cup & 1 tbsp granulated sugar
Pinch of salt
7 egg yolks
¾ tsp vanilla extract
2 tbsp Wild Roots Apple & Cinnamon Vodka
Preheat oven to 350 and lightly butter a 9x13 baking pan
In a medium saucepan, stir together the milk, heavy cream, 1 tbsp sugar, and pinch of salt. Cook on medium heat until mixture comes to a boil.
In a medium bowl, whisk together eggs and ¼ cup of sugar. Add approximately ½ cup of the hot milk mixture into the egg mixture, whisking as you add in slowly. Continue to add the milk mixture ¼ cup at a time until it's all been mixed in. Transfer the mixture back into the saucepan.
Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a metal spoon. Remove from heat and stir in the vanilla and vodka. Add the custard to a large bowl and cover with plastic wrap, making sure the plastic wrap touches the surface of the custard to prevent a film from forming. Chill completely.
Add the custard mixture into your ice cream maker and churn according to instructions. Chill for at least 6-8 hours before serving.
