Pear Almond Cake

​Ingredients

  • .5 cup vegetable oil

  • 1 cup granulated sugar

  • 2 eggs

  • 1.25 cup fresh pears, peeled cored and chopped

  • .5 cup of Wild Roots Pear Vodka

  • .5 cup chopped pecans

  • 1 teaspoon vanilla

  • 1.5 cup flour

  • .5 teaspoon baking soda

  • .5 teaspoon baking powder

  • .5 teaspoon salt

  • 1 teaspoon cinnamon

  • .5 teaspoon nutmeg
     

Directions 

Step 1 

Soak pear slices in Vodka for a least 30 min

Step 2

Preheat oven to 350 degrees. Lightly grease loaf pan. 

Step 3

Combine oil, sugar, and eggs in a mixing bowl. Beat well. Stir in pears, pecans and vanilla. 

 

Step 4 

In another bowl, combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. 

Step 5 

Stir dry ingredients into pear mixture. 

Step 6

Pour into prepared loaf pan.

Step 7

Bake for 55-60 minutes, or until toothpick inserted in the center comes out clean. Allow bread to cool for about 10 minutes before removing from pan and cooling on a wire rack.
